Pinterest Pick of the Week: Tomato Basil Chicken



Another dreary kinda of day. Gotta be thankful there was some blue skies yesterday that I thoroughly enjoyed! Right now I am at Deer Lakes School District for my rotation focusing on food service administration. Another post to follow on that subject shortly. Today we had off for Martin Luther King Junior day and I was able to get some internship work done!

Now I love to look at pictures of food....so that brings about this post from the inspiration of Pinterest! A problem though with Pinterest is that you can have loads of pins and never look at them or try any new creations out! Well, as part my effort to try new foods and recipes out with limited time to budget for this endeavor, I turn to Pinterest. This recipe is credited to Menu Musings of a Morden American Mom. As always, I decreased the butter and increased the veggie intake ;). Threw in some carrots that I roasted in the oven too :). Gotta say nothing beats playing around in the kitchen but time efficiently in under 30 minutes of course. Now my muscles should be well fueled for hopefully a double training kinda of day tomorrow.


 Tomato Basil Chicken Over Pasta



Homemade sauce....added a fresh and light overall taste to the pasta :)

 Ingredients
  • 2 chicken breasts 
  • kosher salt and black pepper
  • 2 Tbsp extra virgin olive oil
  • 2 1/2-3 cups chopped fresh tomatoes (they were soo good!!)
  • 2 tsp minced garlic
  • 2 Tbsp butter
  • 1/2 cup fresh basil, chopped (more the better)
  • freshly grated Parmigiano reggiano cheese
Directions

Set a Season chicken breasts with kosher salt and pepper. Start a pot of water to boil and when ready, add pasta of your choice. When the oil is hot in the pam, add the chicken breasts.  If the oil does not start sizzling immediately, then its not hot enough. Turn down the heat once the chicken has started to cook as not to starting burning the chicken (medium-to-medium high). After about 4-5 minutes, the chicken breasts should be ready to turn. Cook for additional 3-4 minutes and then add the tomatoes and basil. Next add the butter and garlic mix well. Turn the heat down with the tomato basil chicken to simmer until past is done. Dish out and add a some cheese and extra sprinkle of fresh basil. Enjoy!
