Whole Chicken Crock Pot and Roasted Cauliflower Recipe

Hello weekend! Now....I went to the grocery store hungry. Big mistake to go shopping without a plan and on an empty stomach. I came away with a lot of veggies and I mean a lot. Now I just have to make sure I use them all up before they go bad. So roasted cauliflower for dinner it was and now I had to think of something to pair with it. With the grocery trip, I scored two whole chickens for $12.00. I threw one in the freezer and the second in the crock pot. I had never cooked a whole chicken before and just started throwing in the spices. I am pretty excited to pull out the frozen chicken in the future. 

After throwing the chicken in the crock pot, I had some fun at Schenley Park with fellow friend, dietitian, and blogger- Cooking Uncorked.  

Whole Chicken Crock Pot Recipe

  • 1 whole chicken
  • 1 Tsp sea salt
  • 1 Tsp cayenne
  • 1 Tsp thyme
  • 1/2 Tsp garlic powder
  • 1 Tsp onion powder
  • 1 Tsp lemon pepper
  • 2 bay leaves
  • Sprinkle of pepper flakes
  • 2 onions, chopped
  • 1 tomato, chopped (I had one left over so threw it in)
  • 4 celery stalks, chopped

Add chopped onion, celery, and tomato then place whole chicken on top. Add spices and rub on chicken. I added 2/3 cup water. Cook for 6-8 hours depending on your crock pot. I put mine on high for 3 hours and then turned on low for a total cook time of 7 hours. Enjoy! Another great bonus....I got about 2 cups of free chicken broth from the extra liquid to use for some type of soup, and those two cups are gonna be packed with flavor!

Roasted Cauliflower

  • 1 head of cauliflower
  • 1 1/2 Tsp olive oil
  • 4 garlic cloves, minced
  • sprinkle kosher salt
  • sprinkle of black pepper

Preheat the oven to 450. Break  the head of cauliflower and cut up into pieces. Wash the cauliflower and then place it in a bowl with the olive oil, garlic, salt, and pepper. Mix ingredients well. Spray a pan with cooking spray and spread out the cauliflower on the pan and place in the oven. Roast for 35-40 minutes flipping once. Double enjoy cause you just got a serving of veggies!!

I was pretty happy with dinner tonight and even happier to watch the USA track championships with the roommate!
